Bruised Thighs and Drums – Percentage bruised thighs and drums. Assess birds after scalding and feather removal. Stunning Efficacy – Percentage of birds that are stunned correctly. Assess birds directly after submersion. Although the birds may be vibrating somewhat, the head must be limp and floppy. Broken Wings – percentage of birds with broken wings. Assess birds before stunning. A broken wing is evident by the way it flops down loosely while the bird is shackled.
