Receptionist: Would you like breakfast?

In China, cooking is considered both a skill and an art. We Chinese like to say that we have conquered the world through our food. No matter where you go in the world, you can find Chinese food. But sometimes visitors to China are surprised to find that the food here is not the same as the “Chinese food” they have at home. That is because there are so many different styles of Chinese cuisine. For example, Beijing is famous for its “Imperial Cuisine” with delicacies that come from the Ming and Qing Dynasties. The Han, Manchu, Mongolian, and Hui ethnic groups have all influenced Beijing’s cuisine. In Beijing you can enjoy Instant-boiled Mutton, Steamed Dumplings, Dragon Whisker Noodles, Mungbean Flour Cake, and of course, Beijing Roasted Duck, as well as many other local specialty food. And because Beijing is the capital, the most famous dishes from all over China can be found in restaurants here.

Mr. S: Yes, it’s our first time to be in China. There are so many things on the menu. Could you recommend some local dishes?
W: Yes, sir. Would you like to have a set course or a la carte dishes?
Mr. S: I don’t mind, but it must be local flavor.
W: Yes, sir. Our restaurant is famous for Sweet & Sour Shrimp, Fish Slices with Dregs of Wine, Mustard Green Tender, and Pepper Salt Fresh Squid. They are all our specialties. Many guests come to our restaurant to have a taste of them.
