the table to be in spotless and in a good condition,所有餐具摆在桌子上是没有污点和保持良好状态的,Procedures:,程序,1.Prepare hot water,准备热水,Fill up 25%of the soaking pan or wine cooler with boiling water.(Change the water if it gets cold).,在宽口的容器或者酒桶里装满,25%,的开水(如果水变凉了就需要更换),2.Prepare linen glass cloth.(These are special cloths),准备擦杯具的布草(使用专门杯布来擦拭杯具),Use the dry cloth to polish cutlery.,使用干的杯布擦拭餐具,3.Ready to clean,准备清洁,Put cutlery in the hot water with the handle up.,将餐具浸泡在热水里把手朝外面,Use the cloth to polish the cutlery.,使用杯布擦拭餐具,If flatware has water spots or finger print smudges wipe it using hot water and a clean polishing cloth.,如果餐具上有水渍或者手指印,使用热水和干净的杯布擦拭掉,If flatware is dirty(i.e.left over food)return it to the dishwasher for washing,如果餐具是脏的(例如上面有剩余的食物),把它们送回洗碗机去重新清洗,.,If flatware is bent or damaged,remove dip it into hot water.,拿着餐具的把柄将餐具浸到热水里,Fold the cloth into half,put left end of the cloth on the right hand.Note:Do this the other way around if you are left polished last before putting it on the clean tray.Note-Procedures have,been set to ensure flatware arrives from the dishwasher in a polished state.If the majority of flatware is spotted,this should be immediately reported to the Supervisor or Outlet Manager.,在把餐具放进干净的托盘前,最后才擦拭餐具的把柄;注意,以上的程序是要在确保餐具从洗碗机出来的时候是洗干净的情况下才开始执行,如果大部分餐具从洗碗机出来是有污点的,要马上报告给你的主管或者经理,5.Effective Carrying,有效的运输,Do not handle food contact service flatware when placing flatware on the table.Hold flatware on the side of the handle to avoid finger print marks.,当你将餐具布置上桌时不要让食物和餐具接触;拿的时候拿餐具把柄的两边,避免手指在把柄上留下印记,Clean flatware is carried to the table on a lined beverage tray or dinner plate.Remember,once polished handle flatware minimally,hold by the handle only-never by the eating edge,check for lint,fingerprints,water spots,food or smudges.Flatware with left over food stains is returned immediately for washing,check for bent or damaged flatware.,干净的餐具要放在垫着布的托盘或者垫着布的正餐盘上运送到桌子上;记住,一旦最低限度地擦拭了餐具的把柄,就只能拿把柄,决不能拿客人用来吃的那端的边缘,检查餐具上有没有布的绒毛,手指印,水渍,食品或者污迹;餐具上如果留有食品的污迹,马上送回去清洗;检查餐具有没有弯曲或者破损,
