The food to be cooked is finely sliced or shredded into similar sized pieces, using a very sharp knife or Chinese cleaver.
Deep-frying is used in the same way as in the West, to produce crisp-textured food. Sometimes the food is deep –fried, removed from the oil is then reheated and the food deep-fried again,so that it is extremely crispy.
Steaming is an official way of cooking. The Chinese use bamboo steamers which stack on top of each other,so that four or five dishes can be steamed at the same time. Dishes requiring most cooking are place on the bottom layer. near the boiling water, while those requiring less are placed on the top”floor”

Even analyzing the purity of the metal from which a coin was made can provide an insight into the economics of its time. Amater collectors, often called numismatists, enjoy arranging and displaying a collection. Most appealing of all, perhaps,is the possibility of finding rare coins for a bargain price and the hope that coins in a collection will in time increase in worth .
The market value of any coin---that is,the price a dealer would charge for it ---is determined by supply and demand ---the available quantity of a coin and the number of collectors and degree of interest they have in owning it . Once a coin becomes recognized as rarity, its value frequently increase every time it changes hands .A key element in the value of any coin is state of preservation .Any kind of damage greatly reduced the value of a coin. Collectors and dealers use a point system as well as a set of terms to describe the condition of coins.
Collectors are likely to start with coins of their own countries because of their availability. With this kind of collection,e verydate, mint mark ,and variation in design is counted as a different coin.
