酵素对绿豆芽生长发育.

摘要 : 为提高绿豆芽的产量和品质 , 采用酵素稀释 200倍 、 400倍、 600倍液 , 酵素 600倍液 + 亚硒酸钠
(10 “ mol/L ) 、 酵素 600倍液 + 葡萄糖酸锌 ( Zn 2+50 mg/L ) 分别进行绿豆发芽试验处理 , 以清水作为对
照, 对比分析各处理绿豆芽的生长 、 产量和品质表现 。 结果表明 : 酵素及其复配硒或锌对绿豆芽生产均
具有良好的促进作用 , 主要表现在提高绿豆芽产量 , 预防变质 , 增加可溶性糖 、 可溶性蛋白质 、 游离氨
基酸含量 , 降低多酚化合物含量 , 改善品质 , 提高商品价值上 。 本研究证实 , 用酵素 200倍液处理绿豆种
子, 豆芽总体表现最佳 , 其投入产出比 ( 1 : 12.3) 最高 , 适合在绿豆芽生产中推广应用 ; 而在特色豆芽
生产中 , 利用酵素复配硒或锌也能收到理想效果 。

Effects of Enzyme on the Growth, Yield and Quality of
Mungbean Sprouts

Abstract: In order to improve the yield and quality of mungbean sprouts, enzyme diluted 200 times, 400 times, 600 times, 600 times solution of enzyme + 10 “ mol/L of sodium selenite, 600 times solution of enzyme + zinc gluconate (Zn 2+ 50 mg/L) were used to carry out mungbean germination test, respectively. The growth, yield and quality performance of moungbean sprouts were compared and analyzed with clear water as check treatment. The results showed that enzyme and enzyme compounded selenium or zinc had good promoting effects on the production of mungbean sprouts, mainly in improving the yield of mungbean sprouts, preventing spoilage, increasing the content of soluble sugar, soluble protein and free amino acid, reducing the content of polyphenols, improving the quality and increasing the commercial value. This experiment confirmed that the treatment of mungbean seed with 200 times enzyme solution showed the best overall performance and the highest input-output ratio (1 : 12.3), which was suitable for popularization and application in mungbean sprouts production.
